Prosciutto est un assassin de La Squadra Esecuzioni et un manieur de Stand dont le The Grateful Dead peut âger les gens sur une large zone. Lui et Pesci traquent la Team Buccellati jusque dans un train en partance pour Florence et il utilise son pouvoir pour acculer les héros.
Prosciutto est un homme à la carrure fine et de taille moyenne. Il a des cheveux clairs qui peigne collé à son crâne, et qu'il attache en trois petits chignons à l'arrière de la tête. Il a des traits fins, mais garde un air sérieux et déterminé avec ses sourcils froncés. Il semble avoir des dents un peu proéminentes quand il ouvre sa bouche.
Prosciutto porte un costume deux pièces sombres avec un motif de toile d'araignée, une chemise claire, et porte un colier avec une large sphère métallique troué autour du cou. Il a aussi une sorte de noeud autour du cou.

Prosciutto est un assassin aguerri, sérieux et impitoyable. Lorsqu'il apparaît, Prosciutto est toujours sérieux et concentré sur son objectif, citant que la devise de la Squadra Esecuzioni est de ne jamais battre en retraite et de continuer à se battre, même si on est mortellement blessé. De fait, il respecte cette devise à la lettre, et attend la même chose de son compagnon Pesci. Pesci est un homme professionnel et digne. Il déteste les menaces en l'air et réprimande Pesci pour celà, disant qu'en tant qu'assassins, s'il veulent tuer alors ils ne parlent pas mais passent à l'acte immédiatement. Il est alors très sévère avec Pesci, le battant et le réprimandant chaque fois qu'il ne se montre pas digne de son status. Il appelle d'ailleurs Pesci un "fils à maman" ou "mammone". L'adaptation animée de la partie 5 s'étend sur son caractère professionnel. Il réprimande Prosciutto lorsque son assassinat tue quelqu'un qui n'était pas visé, et il est énervé quand Pesci boit du lait, se comportant comme un fils à maman.
Prosciutto est un homme intelligent et aguerri au combat. Il est rusé au combat, et perceptif, ce qui lui permet d'éviter une embuscade de Buccellati.
Malgré son comportement froid et violent, Prosciutto tient à ses camarades. Alors qu'il travaille avec Pesci en tant qu'aîné, il le réprimande mais l'encourage aussi, sachant bien que Pesci a le talent pour être un bon assassin et le réconfortant s'il le faut. De fait, son attitude permettra à Pesci de remplir son potentiel et de devenir une menace capable de battre Blono Buccellati , lui-même un puissant manieur de Stand. Buccellati dira même que Pesci était la plus grande menace entre les deux. Prosciutto montre aussi un certain respect pour Buccellati lorsque celui-ci montre qu'il a l'intelligence et le courage nécessaire pour être capo, et le complimente ouvertement en retirant ses critiques qu'il avait fait plus tôt.
Finalement, Prosciutto est extrêmement déterminé. Lorsqu'il tombe d'un train à grande vitesse et s'écrase dans la machinerie, il maintient son The Grateful Dead pour aider Pesci alors qu'il est blessé à mort.
Le The Grateful Dead de Prosciutto est un Stand à courte portée semi-humanoïde (il lui manque des jambes), plutôt compétent au corps-à-corps. Il peut forcer les gens dans une grande zone à vieillir à vitesse accélérée.
Les assassins découvrent leur camarade exécuté par le Boss
Prosciutto est un membre de l'équipe d'assassins travaillant pour Passione, la Squadra Esecuzioni. Auparavant, ils étaient neuf. L'équipe était alors frustrée car ils ne recevaient leur paye qu'à chaque contrat clôt, alors que d'autres équipes géraient un territoire et gagnaient plus d'argent. Un jour, Sorbet et Gelato se décidèrent à enquêter sur le Boss mais disparurent soudainement. L'équipe se mit à les rechercher et on trouva alors Gelato dans sa maison, ligoté et étouffé par son baillon. Il y avait aussi un morceau de papier sur lui où on avait écrit le mot "Punition". Plus tard, la Squadra reçut des colis et ils découvrirent avec horreur qu'on avait découpé Sorbet en morceaux et mis son corps dans du formaldéhyde. Cette exécution élaborée servait à montrer la toute puissance du Boss et le sort qui attendaient les rebelles. Les assassin désespéraient de pouvoir tenir tête au Boss. Cependant, ils entendirent alors de Donatella Una et sa fille Trish, respectivement l'ancienne amante et la fille du Boss. Ils ses mirent en tête d'essayer de capturer Trish, pensant qu'elle pourrait être la clé pour deviner le pouvoir Stand du Boss. La Squadra Esecuzioni se rebella ouvertement et commencèrent à chasser Trish. Alors que le capo Pericolo avait mis Trish en sécurité, les assassins fouillèrent la maison de Trish pour trouver des indices, manquant ironiquement une photo de Donatella que le Boss lui-même avait prise.
L'adaptation animé se penche un peu plus sur son passé. La nuit où Sorbet et Gelato ont disparus, Prosciutto était en mission avec Hormaggio, Pesci et Melone. Le meurtre de Hormaggio finit avec une femme innocente qui meurt et Prosciutto critique Hormaggio pour cette mort inutile.

Prosciutto et Pesci apparaissent pour la première à la gare de Naples traquant la Team Buccellati. Alors qu'ils observent Buccellati traîner sur le quai, Pesci jure de venger ses alliés tombés au combat Hormaggio et Illuso mais Prosciutto le réprimande alors car il fait des menaces en l'air, ce qui ne sied pas à des tueurs de leur calibre. Prosciutto et Pesci se séparent pour attaquer depuis deux directions, mais Buccellati prend un objet et court soudainement dans le train en partance pour Florence. Prosciutto et Pesci se retrouvent à l'avant du train mais ont perdu la trace des héros. En fait, Buccellati a découvert la tortue Coco Jumbo dont le pouvoir, Mr.President permet à toute l'équipe de se cacher dans sa carapace. La tortue se dirigent alors dans la cabine du conducteur sous le nez des assassins.
Pour forcer le gang ennemi à s'exposer, Prosciutto invoque son Stand The Grateful Dead pour faire vieillir tout le monde dans le train. Prosciutto lui-même se cache dans la foule, déguisé en vieil homme. Guido Mista sort donc de la tortue et essaie de trouver l'assassin. Il parvient à vaincre Pesci, qui a essayé de s'enfuir mais Prosciutto l'en empêche sans se révéler. Mista arrive et tient Pesci en joue, mais Prosciutto s'interpose et le transforme en vieil homme en lui tenant la main. Mista est vaincu. Prosciutto réprimande Pesci pour sa couardise, et montre à quel point il est impitoyable en tirant trois balles dans la tête de Mista.
Buccellati entraîne Prosciutto hors du train
Prosciutto se souvient que Pesci avait mentionné avoir détecté deux formes de vie dans la cabine du conducteur et revient donc là-bas. Pesci doute de sa trouvaille, mais Prosciutto lui assure qu'il a confiance en ses capacités et qu'il doit être juste plus sûr de lui. Pesci mentionne un objet sous le fauteuil du conducteur et ils parviennent donc à trouver Coco Jumbo. Cependant, ils remarque qu'il manque Buccellati. Ce dernier surgit du plafond et attaque par surprise, mais Prosciutto sent le vent et invoque The Grateful Dead à temps pour bloquer Sticky Fingers. Un combat au corps-à-corps s'ensuit. Buccellati sonne Pesci quand Prosciutto ordonne à ce dernier de tuer les membres de l'équipe. Buccellati évite ensuite un coup de The Grateful Dead en séparant sa tête en deux puis envoie un coup de poing dans l'estomac de Prosciutto. Mais les efforts de Buccellati font chauffer son corps à tel point que la glace ne peut plus stopper les effets de The Grateful Dead et Buccellati vieillit. Son Stand est ralenti et Prosciutto l'épingle au sol. Prosciutto dit alors que Buccellati a fait preuve de sottise en voulant sauver ses subordonnés. Buccellati empoigne alors Prosciutto et ouvre un zipper vers l'extérieur, se jetant hors de l'express avec Prosciutto.
Prosciutto maintient The Grateful Dead actif malgré ses blessures
Prosciutto est cependant sauvé lorsque Pesci se réveille et parvient à ferrer sa main avec Beach Boy. Comme Buccellati a voulu se sacrifier pour donner à son équipe l'avantage tactique, Prosciutto complimente ce dernier sur sa bravoure et son intelligence, mais essaie de le faire tomber quand même. Quand Sticky Fingers lance un double coup de poings sur Prosciutto, The Grateful Dead dévie les coup mais Buccellati visait le fil de Beach Boy, car Sex Pistols lui avait révélé les pouvoirs de ce Stand. Prosciutto reçoit un choc est se détache de l'hameçon, finissant sous les roues du train. Cependant, il s'accroche à la machinerie et maintient son pouvoir de vieillissement malgré ses horribles blessures. Encouragé par son exemple, Pesci continue le combat.

Though Prosciutto can attack normally, all of his special attacks require Grateful Dead to be active; as a matter of fact, Prosciutto cannot withdraw Grateful Dead unless a Stand Break is triggered. Throughout the fight, the player character's health will slowly drain as long as Grateful Dead is active, and the effect can only be deactivated via either triggering a Stand Break on Prosciutto or attacking the ice dispenser in the stage. Grateful Dead can accelerate the aging process either by using more power, requiring it to stand still, or by grabbing the player directly.
In Chapter 5-2, a dying Prosciutto will activate Grateful Dead thirty seconds into the battle. Unlike in Chapter 5-1, Grateful Dead does not physically appear, and the only way to deactivate the effect is to Stand Shoot Prosciutto, putting him out of commission permanently.

Dans le roman JORGE JOESTAR, une version alternative de Prosciutto nommé Prosciutto Cappano (プロシュート・ケッパーノ, Puroshūto Keppāno) apparaît dans le 37ème univer. Prosciutto est similaire à son homologue original et travaille aussi pour Passione. Il n'est pas mentionné véritablement dans l'histoire, mais une illustration confirme sa présence.
Prosciutto Cappano a un Stand nommé Twister, dont l'apparence est similaire à The Grateful Dead mais dont le pouvoir est inconnu.
L'île de Nero Nero, là où la base de Passione est située, pousse soudainement des jambes et bougent à travers l'océan pour se diriger vers Morioh. Certains habitants paniquent et essaient de rejoindre le port pour s'échapper. Prosciutto, Cioccolata (Universe 37), Secco (Universe 37), Pesci (Universe 37), Ghiaccio (Universe 37), et Melone (Universe 37) leur tend un embuscade et les tuent. Le Evil Dead de Secco cache le port, de telle façon que Bruno Bucciarati (Universe 37) ne remarque pas le massacre. Un homme s'échappe et fait signe vers Morioh, mais se fait tuer aussi.

Cioccolata est les autres font feux sur des civils innocents et des maisons avec des pistolets et même des lances roquettes. Lorsque Jorge Joestar passe sous eux, ils lui tirent dessus aussi. Les gangsters sautent de l'île et se dirigent alors vers le gymnase Budogaoka avec leurs armes.[3]
