Old Joseph Joestar (老ジョセフ・ジョースター) was confirmed for All-Star Battle R during the game's initial announcement trailer.[1]
Although his moveset remains fundamentally the same as his from All-Star Battle, a few tweaks have been made to both balance the character and fit him into the overall gameplay changes that All-Star Battle R brought along.
Old Joseph's voice actor, Unsho Ishizuka reprises his role in this game, replacing Tomokazu Sugita. However, due to his passing in 2018, his voicelines were reused from Eyes of Heaven. Because of this, some of his voicelines from the original All-Star Battle are not present.
Old Joseph has 950 health and uses both the Stand (スタンド, Sutando) and Ripple (波紋, Hamon) Battle Styles, fighting foes with Hermit Purple. During a fight, he can use several different attacks that were featured in Stardust Crusaders.

While this skill visually shows the Ripple being used, only the variant actually deals Ripple damage. (Flash Cancel comboable) By spending half a stock of HH, Old Joseph can empower the skill, causing it to execute faster, move Old Joseph forward more, deal more damage, and crumple the opponent when hit. Expending a one and a half stocks of the HHG, Old Joseph wraps Hermit Purple's Ripple-conducting vines around his torso to automatically protect himself while chuckling. While this ability is in effect, the next non-HHA/GHA Middle/High attack dealt to Old Joseph by the opponent will cause Hermit Purple to burst out of his shirt. If they are in range, the attack will shock them and push them away. (Comboable) Unlike other counters, Old Joseph will not be protected from damage or hit effects while it is in effect. He is also vulnerable to Low attacks. However, it will trigger against projectiles, though it is possible for the opponent to avoid the counter attack due to it having a set range. If Old Joseph uses his HHA while this counter is active, the effect will be canceled.

Coal Tar

Old Joseph summons Hermit Purple to grab and bring a drum full of coal tar in from off-screen, before crushing it to spill the black liquid all over the floor. If the or variant is used, Old Joseph will move forward while swinging the drum forward. The drum itself has a hitbox and can hit the opponent as it's being swung in. If it hits the opponent, it hits twice, with the first hit knocking the opponent into the air while the second causes a hard knockdown. The distance forward Old Joseph moves and the damage dealt increases in order, but the greater the increase, the longer the recovery. (Flash Cancel comboable)
The coal tar puddle will remain for a set period as a trap that can make Old Joseph himself or his opponent slip and bounce off the ground if they step in it, dealing minor damage. This skill is a reference to his battle with Empress.

This makes the special excellent for evasive purposes such as creating distance or escaping an opponent.

Old Joseph's theme is Can't Hate The Guy (にくめないヤツ, Nikumenai Yatsu), and can be unlocked in-game by landing the "Hermit Purple!" skill in All-Star Battle Mode's Old Joseph vs DIO Normal Battle.
Its name is in reference to Lisa Lisa saying a similar line in Chapter 30 of Battle Tendency after Joseph managed to complete his training in an unusual way. Specifically she says "To use his disadvantage like that, a clever guy!"
