Namesake Gelato is italian for Ice Cream, Sorbet = Sherbet.

About

Gelato and Sorbet where the original team leaders of the assassination squad later going after Buccellati and CO, they had grown to resent the boss and secretly planned to research and reveal his real identity, something strictly forbidden.

Soon enough they are both found dead. Gelato is discovered first, appearing to have died from suffocation. Sorbet is discovered later on after Formaggio and his teammates receives 36 picture frames installed with his formalin-soaked bodyparts. Still alive as he was cut into pieces, it's noted that Gelato most likely swallowed a cloth gag to prevent himself from facing the same painful fate.
